Cooking for One

What do you mean, cooking for one?

I think there are a lot of folks who frequently prepare meals for just one person, either for themselves or for someone else. There is a tendency to fall into a pattern, whether it's preparing the same three or four dishes over and over again, or sticking to hamburgers and hot dogs, or opting for convenience foods, or whatever. Been there, done that.

So what I'm trying to put together is a series of recipes that taste great, are reasonably healthful, and are simple to prepare. Sometimes, just to make things simple, the recipe might be a bit streamlined; for example, in my stir fry recipe, I advocate cooking the meat until almost done, then adding the vegetables, and then the sauce. Many stir fry recipes would have you remove the meat while cooking the vegetables and then adding the meat back in. That might be the ideal way to prepare the food if, say, Emeril Lagasse were coming to dinner, but why bother with those complications otherwise?

So, no, don't expect gourmet recipes; just simple but great tasting. And they need not just be for one person. If you are the designated cook for a group, I think you'll find these recipes very easy to adapt for two or four or more.
